7-Layer Mediterranean Dip
1 1/2 cups hummus
3/4 cup cucumbers, peeled & diced
3/4 cup romaine lettuce, shredded
3/4 cup red onion, diced
3/4 cup tomatoes, diced
1/2 cup kalamata olives, diced
1 cup crumbled feta cheese
Pita chips for dipping
In a 9x13 backing dish, spread humus in an even layer. Add layers in the following order: cucumbers, lettuce, onions, tomatoes, olives and feta cheese. Serve with pitas.
Note: If you would like to make your own pita chips, cut 8 pita rounds into 8 triangles each, toss with olive oil, salt and pepper, and bake at 375 degrees F until golden, stirring occasionally, about 10-15 minutes.
