Avocado Egg Salad

2 avocados, pitted, peeled, and diced
3 hard-boiled egg whites, chopped, yolks removed and set aside
1 teaspoon Dijon mustard
1 tablespoon mayonnaise
1 tablespoon lime juice
salt and fresh ground black pepper to taste

In a medium bowl, mash the diced avocado with a fork. Add the hard-boiled egg whites and stir to combine. Set aside.

In a separate bowl, combine the hard-boiled egg yolks, mayonnaise, lime juice, and mustard. Add to avocado and hard-boiled egg white mixture and stir until combined. Add salt and pepper to taste.

Serve on bread or lettuce.
