Baked Ziti
12 ounces uncooked ziti pasta
4 ounces pancetta or bacon, diced
1 large onion, chopped
3 garlic cloves, minced
1 (1 lb) package ground Italian sausage
1 cup dry red wine
1 (28 oz) can crushed tomatoes
1/2 cup fresh basil, firmly packed
1/2 teaspoon kosher salt
1/2 teaspoon crushed red pepper flakes
1 cup ricotta cheese
1 (8 oz) package shredded mozzarella cheese, divided
1/2 cup grated Parmesan cheese
Preheat oven to 350 degrees. Prepare ziti according to package directions and set aside.
Cook pancetta or bacon in a large skillet or saucepan over medium-high heat for approximately 3 minutes. Add onion and garlic, and saute until onion are tender, about 5 minutes. Add sausage to pan and cook 5 to 7 minutes, or until meat is no longer pink. Add wine and cook 3 minutes more, then stir in tomatoes, basil, salt, and crushed red pepper. Reduce heat to low and cook, stirring occasionally for 3 to 5 minutes more.
Place pasta in a medium-sized bowl. Add ricotta and 1 cup mozzarella cheese, stir to combine. Transfer mixture to a lightly greased 13x9-inch baking dish, top with sausage mixture, and sprinkle with Parmesan and remaining mozzarella cheese.
Bake for 25 to 30 minutes or until bubbling.
