Tator Tot Breakfast Casserole
1 lb bacon or sausage, cooked and cut into bite-sized pieces.
8 ounces mushrooms, sliced (optional)
12 eggs
1/2 cup milk
32 ounces tator tots or 1 1/2 cups red potatoes, cooked, unpeeled, and thinly sliced
1 cup Cheddar cheese, shredded
1 cup Monterey Jack cheese, shredded
dash of hot sauce (optional)
salt and black pepper to taste
Preheat oven to 350 degrees. Lightly grease a 13x9-inch baking dish and layer bottom with bacon of sausage. Layer mushrooms on top of the breakfast meat, followed by tator tots or red potatoes.
In a separate bowl, beat together eggs, milk, hot sauce, salt and pepper. Pour over the tator tots. Top with cheese and bake for 1 hour.
