Breakfast Quinoa Berry Bowl
1 cup milk - cow, coconut, almond, or soy
1 cup water
1 cup red quinoa, rinsed well
2 cups berries - blackberries, raspberries, or blueberries
1/2 teaspoon cinnamon
1/2 cup pumpkin seeds
honey or agave nectar to taste
In a medium saucepan combine milk, water, and quinoa. Bring to a boil then reduce heat to medium-low and simmer, covered, for 15 minutes or until all the liquid is absorbed. Stir in remaining ingredients and serve.
