Carolina Kale with White Beans
1 1/2 lbs kale
3 c chopped fresh tomatoes or 2 cans diced tomatoes
and their juice
1 can Great Northern Beans, drained and rinsed
1 c minced onions
1 1/2 tsps ground cumin
2 garlic cloves, pressed or minced
1 tsp sriracha, Tabasco or any other hot sauce of your
choosing
1/4 tsp crushed red pepper (optional)
1/4 tsp salt
Ground black pepper to taste
Wash the greens. Remove middle stems and slice the leaves crosswise in 1/8" strips or pull apart into bite-sized pieces. Set aside.
Combine tomatoes, beans, onions, cumin, garlic, hot sauce of your choosing, and salt in a saucepan, cover and cook on medium heat for 5 minutes. Add the kale, cover, and simmer for 10 to 15 minutes,stirring frequently, until the greens are tender. Add a little water during cooking, if necessary, to maintain liquid in the bottom of the pan. Add black pepper and additional hot sauce if you'd like and serve.
