Chocolate Covered Strawberries
6 ounces semisweet chocolate, chopped
1 pound strawberries, cleaned with stems intact
optional toppings:
3 ounces white chocolate, chopped
Oreo cookies, crumbled
pink and red sprinkles
mini-chocolate chips
mini-M&M's
Place the semisweet chocolate in a heatproof medium bowl. Fill a medium saucepan with a few inches of water and bring to a simmer over medium heat. Turn off the heat and set the bowl of chocolate over the water to melt. Stir until smooth.
Once the chocolate is melted and has a smooth consistency, remove from heat. Line a sheet pan with parchment or waxed paper. Holding each strawberry by the stem, dip the fruit into the dark chocolate, lift and twist slightly in order to let any excess chocolate fall back into the bowl. Set strawberries on the parchment paper and repeat until all of the strawberries are covered.
Optional toppings include melting the white chocolate in similar fashion to melting the dark chocolate and drizzle the white chocolate over the dipped strawberries by dipping a fork into the white chocolate. Other options include rolling the chocolate covered strawberries in Oreo cookie crumbles, pink and red sprinkles, mini-choclate chips, or mini-M&M's.*
Set the strawberries aside until the chocolate sets, about 30 minutes.
*Allow the strawberries to set slightly, about 10-15 minutes, rolling in cookie crumble, sprinkles, or candies.
