Crazy Chocolate Cake
For cake
1 1/2 cup flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
3 tablespoon cocoa powder
1/3 cup liquid shortening, corn oil, or canola oil
1 tablespoon apple cider vinegar or white vinegar
1 cup water
1 teaspoon vanilla
For icing
1/2 cup (1 stick) butter, softened
1 cup sugar, sifted
1 tablespoon milk
1/2 teaspoon lemon extract
lemon zest from half a lemon
For cake
Preheat oven to 350 degrees F.
In a medium bowl, sift flour, sugar, baking soda, salt, and cocoa powder. Add shortening or oil, vinegar, water, and vanilla. Mix until combined and pour into an ungreased 8x8 pan.
Bake for 30 minutes or until toothpick comes out clean. Recipe makes 12 cupcakes (alter bake time to 20 minutes), 24 mini cupcakes (bake 15 minutes). For a tub pan, double the recipe and bake for 55 minutes.
Allow to cool on wire rack before icing.
For icing
In blender, cream together butter and sugar. Add milk, lemon extract and lemon zest until well combined. Spread on cake or cupcakes.
