Feta & Asparagus Pasta Salad
1 16 ounce package pasta of your choice
1 pound asparagus, cut into 1" pieces
2 tablespoons olive oil
1 cup cherry tomatoes, halved
1 orange bell pepper, chopped into 1/2" pieces
1/2 cup feta
salt and pepper to taste
Balsamic Dressing:
1/3 cup olive oil
3 tablespoons balsamic vinegar
2 teaspoons Dijon mustard
1 clove garlic, minced
salt and black pepper
Cook pasta according to directions, drain and set aside to cool.
Grease a baking sheet with 1 tablespoon of olive oil. In a medium bowl, lightly toss asparagus with remaining tablespoon of oil. Spread on baking sheet in a single layer and broil for 10 minutes.
Once pasta is cool, transfer to a large salad bowl and add bell pepper and tomatoes. Add asparagus.
Prepare the dressing by combining all ingredients in a small bowl and whisk to blend until smooth. Pour over the salad, toss to coat. Add feta, and salt and pepper to taste and serve.
