Grape Sparkler - Three Ways

4 cups red seedless grapes
2 tablespoons lemon juice
2 tablespoons honey
For sparkling wine version:
2 cups champagne, such as prosecco
For vodka cocktail version:
2 cups seltzer
3/4 cups vodka, regular or grape flavored, such as Absolut Grapevine
For kid-friendly version:
1 cup seltzer
1 cup ginger ale
Puree the grapes in a blender or food processor and pour the puree through a fine mesh strainer over a medium bowl. Press gently on the solids to extract all the juice. Add honey and lemon; stir to combine and honey is dissolved.
For the sparkling wine version divide the pureed juice mixture among four champagne flutes. Top with champagne.
For the vodka cocktail version divide the pureed juice mixture among four highball glasses filled with ice. Add seltzer and vodka, stir and serve.
For the kid-friendly version divide the pureed juice mixture among four glasses of choice filled with ice. Add seltzer and ginger ale, stir and serve.
Optional: Freeze extra grapes and float a few in your finished cocktail!
