Kale and Quinoa Salad
1 bunch kale
1 box red quinoa, white can be substituted
2 ¼ cups water
3 cloves garlic
zest from one lemon
juice from one lemon
1/3 to 1/2 cup roasted sunflower seeds
2 Tbsp. chopped chives
8-10 dried apricots, chopped
1/3 cup dried cranberries or Craisins
½ tsp. salt
1/3 cup olive oil
1/3 cup apple cider vinegar
2 Tbsp. Dijon mustard
1 Tbsp. honey, sugar can be substituted
Cook red quinoa as directed and add the 3 garlic cloves to
water while cooking. Remove garlic cloves and let quinoa cool.
De-vein kale and finely chop. Place in a bowl and drizzle with a
little olive oil, half the salt and half of the lemon juice plus zest.
Massage the kale, either with your hands or wooden spoon
until limp.
Mix dressing, olive oil, vinegar, mustard, other half of lemon
and honey.
Once the quinoa reaches room temperature, combine with
kale, add chives, sunflower seeds, apricots, cranberries, salt
and pepper to taste. Parsley and basil could be added also,
especially if you have them in your garden.
Serve room temperature or chilled.
