Lime Beer Can Chicken
1 whole chicken
2 limes, zested and juiced
4 cloves garlic, minced
1 tablespoon chili powder
1/4 teaspoon onion powder
1/4 teaspoon red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons cumin
1 teaspoon salt
1 teaspoon black pepper
1/2 cup olive oil
1 can lime beer, such as Bud Light Lime
In a large bowl, whisk together lime zest and juice, garlic, spices, and olive oil.
Rinse chicken and pat dry. Add to bowl and turn until well coated. Refrigerate and let marinate at least 1 hour, turning occasionally.
When ready to cook the chicken, open the beer and discard about half. Set the can on a cookie sheet and insert the chicken cavity over the beer can.
Preheat the grill to 400 degrees and set the beer can right on the grate. Make sure the burner under the can is turned off and allow the indirect heat from the other burners to cook the chicken. Maintain 400 degrees and keep the lid closed. Cook for about one hour, or until the juices run clear.
Remove chicken from the grill, as well as the can and allow to rest for 15 minutes before cutting and carving.
