Mint Oreo Truffles
1 package Oreo cookies
1 (8 oz) package cream cheese, softened to room temperature
2 cups Andes peppermint crunch pieces, plus extra for decorating
8 ounces white melting chocolate
8 ounces high quality semi-sweet chocolate
Place Oreos, filling and all, in a food processor and pulse until crumbs are formed.
Using a hand-held or stand mixer fitted with the paddle attachment, combine the Oreo crumbs and cream cheese until thick. Stir in Andes peppermint crunch pieces.
Roll into 30-35 balls. Place balls on a parchment paper lined baking sheet and freeze for approximately 30 minutes.
Meanwhile, coarsely chop the chocolate and melt according to package directions. Working with 1 truffle at a time, drop the truffle into the chocolate, roll truffle around in the chocolate with a fork. Use the fork to retrieve the truffle without piercing it and replace on the lined baking sheet. Top with peppermint candy pieces while the chocolate is still wet.
Refrigerate the truffles for at least 10 minutes so the chocolate sets. Truffles will stay fresh for up to 5 days in the refrigerator.
