Pumpkin Crunch Cake
For cake:
3 eggs, beaten
1 cup sugar
2/3 cup pumpkin puree
3/4 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
For topping:
1/4 cup + 2 tablespoons all-purpose flour
2 tablespoons brown sugar
1/3 cup flaked coconut
1/4 teaspoon cinnamon
pinch of salt
1/4 cup chopped nuts
3 tablespoons butter, softened
Preheat oven to 350 degrees F. Lightly grease a 9x13" baking pan or dish and set aside.
Make the cake:
Beat eggs, white sugar, and pumpkin together in a bowl until creamy.
Sift flour, baking soda, cinnamon, cloves, and nutmeg together in a separate bowl. Gradually stir into egg mixture and continue to stir until combined. Spread batter evenly into baking pan or dish.
Make crumble topping:
In a small bowl, stir together flour, brown sugar, cinnamon, salt and coconut iin a bowl. Blend in butter with your fingertips, a pastry blender or two knives until crumbly, then stir in nuts. Sprinkle over prepared cake batter.
Bake for 30 to 35 minutes or until wooden toothpick inserted in center comes out clean. Cool in pan on wire rack.
