Shredded Beet Salad with Goat Cheese and Lime Vinaigrette
Beet Salad
4 cups grated raw beets (about 1¼ pounds)
2 tablespoons crumbled goat cheese
2 tablespoons chopped fresh chives
Lime Vinaigrette
2 tablespoons fresh lime juice
1 teaspoon Dijon mustard
1/2 teaspoon garlic powder
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon ground black pepper
For the vinaigrette:
In a jar with a lid, shake together Lime Vinaigrette ingredients and set aside. There will be extra dressing.
For the salad:
Toss the beets with the dressing. Top with goat cheese and chives. Serve at room temperature.
