Shrimp and Pasta in Herb Sauce
2 tablespoons olive oil
1 large lemon, yeilding 1/4 cup lemon juice and zested
3 cloves garlic, minced
1/2 cup fresh parsley
1/4 cup fresh mint
1 pound medium shrimp
1/2-3/4 pound angel hair pasta, cooked al dente
fresh Parmesan cheese, grated
salt and fresh-ground black pepper to taste
Cook pasta according to package directions, until al dente, drain and set aside.
In a large skillet, heat the olive oil. Add lemon zest and garlic and saute over medium heat, about 2 minutes.
Add shrimp and saute until opaque, about 4 minutes. The shrimp should be almost cooked - be careful not to overcook or shrimp will be tough.
Add parsley, mint, salt and pepper, and cook 1 minute longer.
Stir in lemon juice and cook 1 more minute. Add mixture to cooked past and toss to coat.
Sprinkle with Parmesan cheese and serve.
