Julie's Stir Fry for 2

Ingredients:
  • 1 Pound of a Meat: Chicken and/or Steak - Cut in 1inch cubes
  • ​1 Bunch of Asparagus - Remove tough ends and then cut in half
  • 1 Red Pepper, cut across center then thick julienne strips
  • ​1 Cup of Fresh Pineapple - Cut in 1 inch cubes
  • ​2 Handfuls of cleaned Snap Pea pods
  • ​2 Tbsp of Olive Oil
  • ​2 Tbsp of Low Sodium Soy Sauce
  • 2 Tbsp of Hoisin Sauce
  • ​2 Tbsp of Dijon Mustard
  • Season to taste with salt, pepper and garlic powder
​*Feel free to add additional veggies to make this dish your own like water chestnuts, baby corn, broccoli and/or carrots!

Instructions:

1.  In large skillet heat Olive Oil 
​2. When heated add meat and cook till browned; be careful as oil will splatter
​3. Add vegetables to browned meat and toss for 5 minutes
​4. Add Soy Sauce, Hoisin Sauce and Mustard and stir 
​5. Sauté until cooked to your taste.  About 5-8 minutes over medium heat to be al dante.
​*This can be served over rice if you would like.
