Sweet & Spicy Black-Eyed Pea Salad
1 16oz can black-eyed peas, drained and rinsed
1/4 c celery, chopped
1/4 c onion, chopped
1 clove of garlic, pressed
1/4 c olive oil
1/4 c sugar
1 Tbsp vinegar
3-6 drops hot sauce, or more if you like it spicy
salt and pepper to taste
If you'd like to give this more of a salsa-like consistency:
1/4 c peppers, chopped
1/4 c tomatoes, chopped
1 Tbsp cilantro
Place the black-eyed peas, celery, onion, and optional peppers, tomatoes and cilantro in a medium bowl.
In a separate bowl, combine garlic, olive oil, vinegar and hot sauce, and whisk until smooth and sugar is dissolved. Pour mixture over salad and toss to coat.
Add salt and pepper to taste and serve.
Serves 4-6
