Toffee Grahams

1 1/2 sleeves of graham crackers, broken in quarters
1 cup (2 sticks) butter
1 cup brown sugar, packed
1/2 tsp vanilla
1 cup pecans, chopped
Preheat oven to 350 degrees.
Line a baking sheet with foil and spray with non-stick cooking spray. Set aside.
In a medium saucepan, melt butter. Add brown sugar, bring to a low boil, and stir constantly for three minutes. Remove from heat and stir in vanilla.
Spread graham cracker pieces on foil-lined baking sheet. Spread butter mixture over the graham crackers, smoothing evenly with a rubber spatula. Sprinkle with pecans and bake for ten minutes.
