Tomato Watermelon Salad
3-4 medium tomatoes cored and diced
1 cucumber sliced and then cut in quarters
1 cup-cubed watermelon, seeds removed
1 avocado, pit and peel removed and cut into cubes
1 Tbsp chopped fresh herbs of choice, such as basil, chives, and cilantro
1/4 tsp cumin
3 Tbsp extra virgin olive oil
3 Tbsp balsamic vinegar
Salt and pepper to taste
1/2 c Feta cheese
Combine the tomatoes, cucumber, watermelon, and avocado in a medium bowl. Add the herbs and cumin and toss to combine.
In a separate bowl, whisk together the olive oil, balsamic vinegar, and salt and pepper. Pour over the tomato mixture and toss to coat evenly. Add feta cheese and adjust seasonings to taste, if needs be.
