Watermelon Coolers
4 cups watermelon, seeded and cubed
1/4 cup lime juice
1 lime, sliced for lime wheel garnish
pineapple mint sprigs, for garnish
Pineapple mint-infused simple syrup
1 cup water
1 cup sugar
1 cup pineapple mint sprigs
optional: 8 oz Silver tequila
For pineapple mint-infused simple syrup
Combine 1 cup water with 1 cup sugar in a medium saucepan and bring to a boil. Stir constantly until the sugar is dissolved and the liquid is clear, about 5 minutes. Remove from heat and add 1 cup pineapple mint leaves. Let steep for 20 minutes, then strain mint leaves and let cool completely. The syrup will keep, refrigerated in an airtight container, for up to one week.
For watermelon coolers
In a blender puree the watermelon and strain through a fine sieve. In a small pitcher, pour the watermelon juice, 1 cup simple syrup, lime juice, and optional tequila. Mix well.
Pour into glasses and garnish with mint sprig and lime wheel.
